I'm sharing with you one of my favorite recipes (Here I make it on the fire, but you can do it in the pan for better cooking control) 🍳
Muffins cooked in the pan
ref. Book : Outdoor Gastronomy, Odile Dumais (my bible😋)
INGREDIENTS :
1/4 cup finely chopped raisins
4 dates, very finely chopped
4 dried apricots, very finely chopped
1/4 cup powdered milk. (powdered milk for camping recipe, you only have to add water!)
3/4 cup organic unbleached flour
1/3 cup oat bran
1/4 cup toasted or plain wheat germ
1/4 cup raw sugar or brown sugar
1 C. baking powder
1 fresh egg or 2 tbsp. freeze-dried egg
4 tbsp. tablespoons peanut or canola oil
2 tbsp. tablespoons peanut or canola oil for cooking
PREPARATION
At home
1. Pack chopped dried fruit, powdered milk and all other dry ingredients in a bag or container.
2. Transport the oil in a small waterproof container.
At camp site
3. pour the dry mixture into a bowl and make a well in the center.
4. All at once, add 1/2 cup cold water (or enough to make a workable dough) stirring just enough to moisten the dry ingredients. Limit manipulation
5. Add the oil to the mixture all at once.
6. Incorporate the fresh egg into the preparation. Using freeze-dried egg (mixed with dry ingredients) and adding 3 tbsp. additional water.
7. In a non-stick pan, add a little oil.
8. Place 2c. of the mixture, flatten it slightly and give it a rounded shape. If you use a large pan with a diameter of 22 cm, the 8 small muffins can be cooked at the same time. I really like baking muffins on a cast iron baking sheet or on aluminum foil placed on the fire grate.
9. Cover (with lid or aluminum foil) and cook over very low heat for 5 minutes.
10. Flip each muffin and leave on the heat until they are cooked in the center, about 3 minutes. Check by pricking the blade of a knife: if it comes out clean, the cooking is finished.
11. Enjoy with the spread of your choice. Here we have a weakness for almond butter :)
